Pineapple Coconut Smoothie- this healthy and easy smoothie will carry you to a tropical isle!
We partnered with American Express and Hilton Honors to the Waldorf Astoria resort on Maui for a visit last week, and we miss it! Ca n’t every week be holiday? We have had difficulty getting back to real life and loved the beach life. The lads continue to be on Hawaii time, a four-hour difference, and they miss fresh pineapple, playing in the sand, and swimming. Everyday, we ate fresh pineapple. Hawaii pineapple is the very best!
Yesterday, to cheer up my lads, I made them Pineapple Coconut Smoothies. I brought a bit of Hawaii into our house!
This smoothie is simple to combine upward! Blend fresh pineapple, coconut milk, yogurt, coconut, and ice in a blender and mix until smooth. Pour into glasses, garnish with toasted coconut, and appreciate!
Maxwell and Caleb adored their Pineapple Coconut Smoothies. The smoothies helped heal our post vacation blues, although they miss the shore!

This healthy and simple smoothie is excellent for snack or breakfast time!

Total time: 10 MINUTES
2 cups chopped fresh pineapple
1/2 cup coconut milk (I use Almond Breeze almond coconut milk)
1 (6 oz) container vanilla or coconut yogurt
2 tablespoons coconut
1 cup ice
Toasted coconut, for garnish, optional
Combine the pineapple, coconut milk, yogurt, coconut, and ice in a blender. Blend until smooth. Pour smoothie into 2 glasses and garniture with toasted coconut, if using. Serve immediately.
